Perfectly Patriotic! A Red, White & Blue Potato Salad

Give your potato salad a makeover for this years Memorial Day picnic or BBQ. This recipe uses an olive oil based dressing  as an alternative to mayonnaise making it healthier in terms of good fats. I also made this a “POTATO” salad and took the eggs out. You can add them in if you would like but as a stand-alone potato dish, it pairs up nicely with other proteins. The tricolor potatoes used in the dish really stand out flavored with fresh herbs.

  • 1.5 cups fingerling potatoes, quartered
  • 1.5 cups small red potatoes, quartered
  • 1.5 cups small blue potatoes, quartered
  • 2 tbsp. of olive oil or avocado oil to saute potatoes
  • 2 Tablespoons chopped fresh parsley
  • 1 Tablespoon chopped fresh chives
  • 1 Tablespoon chopped fresh dill
  • 1/4 cup red wine vinegar
  • 1 1/4 teaspoons salt
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon freshly ground black pepper
  • 1 tbsp. of olive oil or avocado oil


1. Place fingerling and red potatoes in saucepan; cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender. Drain.

2. Cut the potatoes into cube sized pieces. In an empty saucepan, saute the boiled potatoes. Place 1 tbsp. of olive oil in the empty saucepan and add in boiled potatoes. Saute for about 5 minutes moving the potatoes around gently. This gives the potatoes a crispy texture with a soft middle.

3. Simultaneously,  you can place the blue potatoes in a saucepan; cover with water. Bring to a boil. Reduce heat; simmer 10 minutes or until tender. Drain; and saute like the above fingerling and red potato mixture. You want to cook the blue potatoes separately as they tend to bleed.  Allow to cool slightly.

4. In a bowl, combine all 3 varieties of potatoes with the parsley, chives and dill. Toss gently.

5.  In a separate mixing cup, make your dressing by combining vinegar and remaining ingredients. Pour over potato mixture; toss gently to combine. Serve warm, at room temperature, or chilled.
